I'm VERY happy with how the weekend started. Nikhil and I are together again! We talked for hours yesterday, and I made him supper. We were able to resolve our issues and together decided to move forward again as a couple. Nikhil has been my world, and (most importantly) he's my honey bear!
Nikhil is going to be busy with tennis this summer, but we plan to see each other more on days he's not playing tennis. We have date nights planned this week already.
JOB HUNT: I am going to be meeting this week with Stacy and her husband, owners of a private consulting firm, on a possible job! I've been unemployed for one month, and I'm still alive an kickin'!
FOODIE: Nikhil and I are making supper together again this Saturday! I'd like to make Instant Pot Couscous with Ground Beef. It's a recipe from Nikhil.
The blogger writes: "I grew up loving couscous. We call it 'marmahon' and in Honduras, it is most commonly made with chicken." I recently met Nikhil's Honduras "family" in South Dakota. This would be an easy recipe, and I assume next Saturday will be a hot day. Using the Instant Pot will not heat up the kitchen whether we are at my place or Nikhil's.
