Pandemic Prime Rib Sunday

The best way to approach surviving a Pandemic is to take it one day at a time. I'm lucky that no loved ones or me have contracted COVID-19 yet. Taking vacation always sounds like fun, but this isn't the way I wanted to take vacation. (COVID-19 cases in North Dakota rose to 45 today.)

So, with that said, another way to survive a Pandemic is having faith and hope, making smart health decisions, and EATING DELICIOUS MEALS! I have a prime rib in my freezer that my company gave the employees for Christmas. It's time for some Pandemic Prime Rib! Nikhil and I will also have leftovers for the upcoming week.

MENU:
  • Prime Rib
  • Roasted Vegetables (potatoes, sweet potatoes, onions; sprinkled with olive oil, garlic, rosemary, thyme, and parmesan cheese) 
  • Couscous 
  • Skipping dessert
